Marjoram

May be used both dry or green.  Used to flavor fish, poultry, omelets, lamb, stew, stuffing and tomato juice.

Mint

Leaves are aromatic with a cool flavor.  Excellent in beverages, fish, cheese, lamb, soup, peas, carrots. and fruit desserts.

Oregano

Strong aromatic odor.  Use whole or ground to spice tomato juice, fish, eggs,pizza, omelets, chili, stew, gravy, poultry and vegetables.

Paprika

A bright red pepper.  This spice is used in meat, vegetables and soups.  Can be used as a garnish for potatoes, salads or eggs.

Parsley

Best when used fresh but can be used dry.  Use as garnish or seasoning.  Try in fish, omelets, soup, meat, stuffing and mixed greens.

Rosemary

Very aromatic, used fresh or dried.  Season fish, stuffing, beef, lamb, poultry, onions, eggs and bread.

Saffron

Orange yellow in color, this spice is used to flavor or color foods.  Use in soup, chicken, rice and   fancy breads.

Sage

Use fresh or dried.  The flowers are sometimes used in salads.  May be used in tomato juice, fish, fondue, omelets, beef, poultry, stuffing, cheese spreads, cornbread and biscuits.

Tarragon

Leaves have a pungent, hot taste.  Use to flavor sauces, salads, meat, poultry, tomatoes and dressings.

There you have it.  A few more herbs and spices to get acquainted with.  Try them often and enjoy the new flavors in your life!!!

Basil 

Sweet warm flavor with an aromatic odor, used whole or ground.  Good with lamb, fish, roast, stews, ground beef, vegetables, dressing and omelets.

Bay leaves

A pungent  flavor , use whole leaf but remove fefore serving.  Good in vegetable dishes, fish and seafood, stew and pickles.

Caraway

Has a spicy smell and aromatic taste.  Use in cakes, breads, soups, cheese and sauerkraut.

Chives

Sweet mild flavor of onion, this herb is excellent in salads, fish, soups and potatoes.

Curry Powder

A number of spices combined to proper proportions to give a distinct flavor to such dishes as meat, poultry, fish and vegetables.

Dill

Both seeds and leaves of dill are flavorful.  Leaves may be used to garnish or cook with fish, soup, dressings, potatoes and beans.  Leaves of the whole plant may be used to spice dill pickles.  

Fennel

Both seeds and leaves are used.  It has a sweet hot flavor.  Use in small quantities in pies and baked goods.  Leaves can be boiled with fish.

Ginger

A pungent root, this aromatic spice is sold fresh, fried, or gound.  Used in pickles, preserves, cakes, cookies, soups and meat dishes.

Try to become more acquainted with the herbs and spices available.  They really do enhance your cooking and baking.

We are told over and over again not to take large portions of food.  Controled portions of food help you to maintain and lose weight.  Mega portions mean more calories and a weight gain.  This is not exactly true.  Very strict diets can make you feel deprived and always hungry. What you choose to eat has  a  lot to do with it.  Soups such as Progresso Light  provide a full serving of vegetables and can help you control calories without that empty bowl feeling.  A good salad with carefully chosen salad dressing can also give you that feeling.

Satiety (which means being full and totally satisfied and not able to take on more) is essential in helping you control calories and stick to a healthy pattern of eating habits.  Pick and choose foods that are healthy and give you that satisfied feeling.

Thing to remember:  It takes your brain 20 minutes to start signaling a feeling of fullness.  Try to eat slowly, chew your food well, eat less, and enjoy what you eat.

You have heard the statement, "practice what you preach"?  I am going to try to turn over a new leaf and try to be more aware of all of this.

Summer is coming and we are all looking for something we don’t have to turn on the heat  to prepare.  This salad takes a small amount of preparation time , but not much. 

1/4 cup shredded carrots

1 red apple diced

1/4 cup nuts chopped

1/3 cup raisins

1/4 cup sour cream

1 T lemon juice

1/2 cup cottage cheese

lettuce leaves

Combine all ingredients, except the last two; chill; place on lettuce and top witih cottage cheese.

You can make this into a larger recipe because this only serves one.

Combine first seven ingredients. Combine all dressing ingredients; pour over the ham mixture and toss. Refrigerate. Yield: 110 servings
Macaroni salad for 100
 
5-6 pounds of macaroni cooked and drained
5-6 pounds of fully cooked ham, cubed 
3 pounds of shredded cheddar cheese
2 bags of 20 ounces frozen peas, thawed
2 bunches celery chopped (about 12 cups)
2 large onions, chopped- about 2-2 ½ cups)
2 cans pitted ripe olives (5 ¾ ounces) drained and sliced
 
 
Dressing
 
1 bottle of Western style or French salad dressing – 8 ounce              
2 quarts of mayonnaise
¼ cup vinegar
¼ cup sugar
1 cup light cream
1-1/2 tsp. onion salt
1-1/2 tsp. garlic salt
1 tsp. salt
1 tsp. pepper
